You can approach your search in two ways:

1. Make a shortlist of wineries where you'd like to volunteer and contact them directly (you may be lucky to be accepted at your favourite one)
   

2. Contact these two institutions and ask if they know of any wineries that are looking for or open to accepting volunteers and they should be able to connect you with them. - The German Wine Institute (Deutsches Weininstitut, DWI) - the central marketing and communication body for Germany's 13 wine regions, promoting their quality and sales worldwide through public relations, education, events, and market research. https://www.winesofgermany.com/ - The Verband Deutscher Prädikatsweingüter (VDP) - an association of around 200 of Germany's top wine estates dedicated to promoting superior quality wine production through strict standards on vineyard management, grape growing, and winemaking that exceed German wine law requirements, with a classification system emphasizing terroir and site-specific excellence across Germany's main wine regions. https://www.vdp.de/en/
